Pesto Pizza with Artichoke, Black Olives & Basil

Looking for something to make with your leftover pesto? Just make pizza! You can get really creative with the toppings. My favorite toppings are pineapple, onions, and black olives. A little odd but so good, trust me. If you like to share your favorite pizza topping combinations please leave them in a comment below. This recipe is super simple and yummy. I can’t take credit for it though, one of my BFF’s Lani gave me this recipe. She doesn’t mind sharing the love and you will love this one!

Ingredients

  • 2-Tbsp of Pesto (Recipe here or store-bought.)
  • 1-Package of Pizza Dough (I picked up mine at a local grocery store but you can make your own if you prefer.)
  • ¼ cup of mozzarella cheese
  • 1 can of Artichoke Hearts (chopped)
  • 1/2 cup of Black Olives (chopped)
  • A few Basil leaves

Serves 8

Preparation Time: 30 minutes

Cooking Time: 18 to 25 minutes

  • Preheat oven to 400 degrees. Before handling the dough make sure you cover your hands with some olive oil. Roll out the dough and place on a baking pan, I use the AirBake Nonstick Pizza Pan. 
  • Spread an even layer of pesto onto the dough.
  • Add mozzarella cheese on top of the pesto. You can add as much or as little as you like.
  • Top with Artichoke Hearts, Black Olives, and a few Basil leaves. If you don’t have fresh basil on hand you can sprinkle some dried basil instead.
  • Bake for 18 to 25 minutes or until crust is golden brown.
